African Sweet Potato & Peanut Soup

I made this wonderfully different soup for Sunday night dinner. Sweet potatoes, peanuts and spinach, what a combination! But oh, so good.

Large can of Chicken Broth (I used the 99% Fat Free kind)
2 T. Peanut Oil (or veg. oil)
1 Medium Onion, diced
1 T. Minced Ginger
1 T. Minced Garlic
2 teaspoons ground cumin
1/2 tsp. salt (optional)
1/4 teaspoon ground cinnamon
1/8 teaspoon crushed red pepper
1/4 teaspoon ground coriander
1/2 Lb. Cooked Chicken, cut into bite size pieces
2 Sweet Potatoes, peeled and cubed
1/2 lb. Spinach (or Kale, your choice)
3/4 C. Chopped Peanuts (I used unsalted, dry roasted)
1/2 C Peanut Butter, chunky or smooth, your choice
Cilantro for garnish, if desired

Saute onion in peanut oil, over medium heat, for about 5 minutes.
Add garlic and ginger. Saute 3 minutes.
Add chicken broth and potatoes. Add spinach, peanuts and peanut butter.
Cook soup over low heat for about 1 hour.

Your blog is fantastic... love your idea to felt soap for little hands~ I love to needle felt but it is fun to see what creative folks do with wool! Amazing!
Wishing you all the best... I'll be following along!

Oh yum! What an incredible sounding recipe. I'm a huge soup fan in the fall so I can't wait to try this one.
